Yield - 6 burgers

Ingredients

2 ⅔ cups cooked toasted millet

¼ cup onion, finely chopped

3 cloves garlic, crushed

1 tsp coriander

½ tsp thyme

1 tsp cumin

4 stalks escallion (green onion, spring onion, Welsh onion), finely chopped

¼ cup water

Instructions

  1. Preheat oven to 350 ℉.

  2. Line a baking tray with non-stick parchment paper.

  3. In a large bowl, add the cooked millet and all seasonings. Mix to combine.

  4. Add pre-baked oat flour to the large bowl and mix to combine.

  5. Add water and knead the mixture with your hands to form a dough. As you knead, squeeze the mixture to help crush the millet.

  6. Once you have formed the dough, break it into 6 equal pieces.

  7. Take each piece of dough, form it into a ball and flatten between your palms until it takes the form and shape of a burger.

  8. Place each burger on the parchment paper-lined baking tray.

  9. Place the tray in the preheated oven and bake for 25 minutes, then flip and bake for another 5 - 10 minutes, depending on how crisp you want your burgers.
