Oil Free Baked Dumplings (Yum Dums)

Ingredients:


½ cup baked oat flour

½ cup buckwheat flour*

1 TBSP each of ground: flaxseeds, pumpkin seeds, sesame seeds, and sunflower seeds

1 TBSP psyllium husk powder

¼ cup + 2 TBSP warm water (omit extra 2 tbsp if using honey)

4 TBSP Sucanut or 3 TBSP honey**

¼ tsp pink Himalayan salt


Directions:


  1. Preheat oven to 400 degrees Fahrenheit.

  2. In a medium-sized bowl add oat flour, buckwheat flour, psyllium husk powder, pink Himalayan salt and mix with a fork to combine.

  3. Grind pumpkin seeds, flaxseeds, sesame seeds and sunflower seeds and add to bowl with dry ingredients

  4. Add honey to the bowl with dry ingredients.

  5. Add warm water a little at a time and begin to mix with a fork then eventually knead with your hands until a dough is formed.

  6. Separate into however many pieces you would like form balls.

  7. Line a baking tray with parchment paper and place each yum dum on the parchment paper.

  8. Bake in the oven turning every 8 minutes twice then bake for another 5 minutes. You may turn the oven off after the last 5 minutes and leave the yum dums in the oven for another 5 minutes, depending on how crisp you want them.

Notes:

*Baked corn flour or baked millet flour can be substituted for the buckwheat flour.

**Honey or other liquid sweetener such as maple syrup or agave.
